Saturated fatty acids do not have double bonds in their chains, while unsaturated fatty acids have one or more double bonds.

The physical properties of a fatty acid depend on the length of the hydrocarbon chain and the degree of unsaturation. Thus the melting points of saturated fatty acids increase as their molecular mass increases due to the increased van der Waals interactions between molecules.
