Cartilage is the hard but flexible structure found in pieces of your nose and ears. It is similar to bone, but allows for flexibility and movement. When looking at skeletons, you'll notice that they don't have a nose or ears, because cartilage deteriorates much faster than bone. Cartilage is also found in elsewhere in the animal kingdom--the skeletal structure of a shark is made primarily from cartilage!
