However, if you started at 10, then your line would move up to the point (0,10) meaning instead of it crossing (0,1) on the y-axis, it would cross the point (0,10) which is it's starting point if you start at 10 bacteria.

The graph would look different, because the starting point would be different. Since here you started at 0, because there were 0 bacteria in the beginning, it would instead start higher up. The slope would also be greater, since you're starting with 10 * 2, and then continuing to multiply from there, instead of with powers of 2.
