The energy they are reffering to is heat . When you swim in cold water the heat of your body is transffered to the water becasue i guess it s because it wants to reach and enqilibrium within the systems.Nature in general doesn t like gradients.And also in water we loose more heat compared to air of the same temperature i guess this happens because water compared to air is a liquid it has (greater density, it s directly in contact with our body)

My guess is that water is a liquid and not a solid, or a gas. It can be heated by us or by the suns rays, which if done by the suns rays the water azorbs the light rising the temp to the point of boil which then makes the water evaporate into the air, and thus making cloud in the sky that we see all the time thus when the clouds become big enough it begins to rain. ( also called the water cycle)
