In this example, servers are paid to be nice, pleasant and courteous. They are in contact with clients in a regular way and therefore t<u>hey need to have appropriate feelings according to the situation and they need to manage their emotions especially when there are problems with the clients.</u> Cooks are not in contact with clients so they can be loud, vulgar, insensitive and rude. Thus, the part of a server's job that doesn't apply to a cook would be emotion work.
