According impulse-change in momentum principle.

Impulse = change in momentum

Force x time = change in momentum

The change in momentum whether we fall on a rigid surface or soft surface.

The soft objects used in mats, airbags and padding in sports uniform increases the time during the same amount of change in momentum takes place. Since the change in momentum is the product of  force and time, as the time of contact increase, the amount of force decrease to keep the product or change in momentum  constant.
