They are in fact changing physically and chemically. Physically, they change their shape, and chemically, the chemicals inside them (which I don't want to name), are basically burning to put it into simplest words. If you really want the chemicals that are being chemically replaced and burned, just tell me.

It is being changed chemically. The easiest way to find it out is by figuring if it can be undone. Can you "uncook" a pancake once it is cooked? <em>Nope!</em> That's the main reason why. Another reason is that it is the result of a <em>chemical reaction</em>. You heated the raw mixture to a high temperature, causing it to mold in a certain shape and change its texture.

The measurement doesn't take the temperature changes into consideration which will lead to the result being most likely incorrect. It is also advantageous because less time is used thereby making it easier.
