Sodium bicarbonate is used to neutralize the remaining HCl at the end of the reaction. The initial products of this reaction are

For the first process; Sodium bicarbonate reacts with HCl to produce the carbonic acid and a salt, known as Sodium chloride.

Na2CO3 + 2HCl ----------> 2NaCl + H2CO3.

The second process shows the decomposition of Carbonic acid into carbon dioxide and water.
