Answer and Explanation:

The computation is shown below:

a)  Liabilities to equity ratio is

= $200 ÷ ($500 - $200)

= 0.667

Times interest earned ratio is

= EBIT ÷ Interest expense

= $120 ÷ $28

= 4.285

Times burden covered is

= EBIT ÷  (Interest +Principal repayment ÷ ( 1 -tax rate))

= 120 ÷ (28+24 ÷ (1-0.4))

= 1.764

b)

Interest paying requirements

= ($128 - $20) ÷ 120

= 76.7%

Principal and interest requirements

= [$120 - ($28 + $24 ÷ (1-0.4))] ÷ 120

= 0.433 or 43.3%

Principal, Interest and Common dividend payments -

= [$120 - ($28 + (($24 + 0.3 × 20) ÷ (1 - 0.4))] ÷ 120

= 0.35 or 35%

Besides browned mirepoix and bones, what else gives brown stock its darker color?
gtnhenbr [62]

Brown stock gets its darker shade from tomato paste in addition to browned mirepoix and bones.

A mirepoix is a flavor basis produced from diced vegetables simmered for a long time on low heat without coloring or browning. This is done because additional cooking, frequently with the addition of tomato purée, results in a darkened brown mixture called pinçage. Since the goal is to sweeten rather than caramelize the ingredients, it is neither sautéed or otherwise hard-cooked. It is a time-tested method of cooking used in French cuisine. Depending on the total cooking time for the dish when the mirepoix is not precooked, the constituent veggies may be cut to a bigger size.
