Even though keeping vegetables frozen or in the refrigerator will lower the rate of respiration of Vegetables which in turn lowers the rate of decay of the vegetables. It is not all Vegetables that has be to be kept in the refrigerator for preservation some are just to be kept at room temperature for instance Onions(with the exception of green onions), pumpkins and potatoes are to be at room temperature. Also, when vegetables are going to be cut into a spiral garnish they should be at room temperature and not frozen which will also make it easier to cut.
