Answer:

The U.S. Food and Drug Administration (FDA) has the Employee Health and Personal Hygiene Handbook, which specify the practices and behaviours that prevent viruses and bacterias spread by food employers. The FDA, based on The Centers for Disease Control and Prevention (CDC), have five highly infective diseases that can be easily transmitted and they have an special attention, being Salmonella one of them.

In addition, according to the Retail Food Protection, food establishments have to pay special attention to specific symptoms like vomiting, diarrhea, jaundice (yellow skin or eyes), sore throat with fever and infected cuts and burns with pus on hands and wrists, all these are bacteria or virus-based. Someone with diarrhea and vomiting symptoms like this probably has Salmonella for, and if they show this illness at work, they immediately must go home and return after 24 hours the symptoms these stopped.
