When food is left in atmosphere for a longer period of time then the oxygen in the atmosphere oxidizes the food leading to its spoilage.

As a result, the food becomes unfit for consumption.

Whereas when we add acid to our food then the acid helps in reducing growth of bacteria and microbes because on addition of acid pH of food also decreases.

Moreover, acids will add sour taste to food.
