Esto se debe a que la heladera tiene mucha menor temperatura que la temperatura ambiente.

Esta menor temperatura ayuda a luchar contra los microorganismos que están en los alimentos (bacterias, hongos, etc) pues detiene en gran medida su repreduccion, la cual se ve maximizada en los rangos entre 5°C y 60°C, tal que la temperatura ambiente suele estar en el rango donde los microorganismos prosperan y se reproducen, es por ello que los alimentos se conservan mucho mejor en ambientes fríos (como la nevera) que en temperatura ambiente.
