It doesn't "change" it it breaks it down. I don't if I got this the right way but i think the small intestine absorbs the needed nutrients. the large one gets the UN wanted junk that produces poop.

By there pH . a pH below 7 is acidic . Above 7 is basic. If it’s right at 7 it’s neutral.
