They does not change their shape and volume as their particles are tightly held to each other through strong bonding and strong forces of attraction.

They changes their shape on liquid when the temperature is raised and the energy of the particles increases and thus liquid can change into gas by further increment of the temperature.

A pudding would be considered as solid since the molecules are in an ordered state and they are close to each other which gives definite shape and volume for the pudding. This is also true for the bucketful of sand. Hope this answers the question.
