Brown sugar is also much nutritious to white sugar  that is why it is more commonly use. The brown sugar become lumpy because when brown sugar is exposed to air it gets harder because the molasses that keeps its soft evaporates that makes the sugar stick together. The rolling pin helps the lump to break up.
